Be sure to have her agreed upon arrival time written in black and white. She arrived at my daughter's wedding reception an hour early then used my credit card from a previous retainer payment and tried to charge me for her early arrival. She stated she liked to arrive early. She also did not stay and set up, serve,and clean up as agreed. Some of my guests had arrived early and intercepted the food and she left. She stated that we had "ruined her afternoon". I will never, ever use this catering service again!!!!!!
