Escondido combines a fusion of items from the Coastal, Central, and Northern Mexico regions. World-class ceviches, agua chiles, crab cakes, and fish tacos are crafted from sushi-grade seafood, weaving in the flavors from the Pacific Coast. Chicken Mole, Barbacoa, Al Pastor, and Carne Asada are sourced from ranches in the Northern New Mexico region. The veal-stuffed Chiles En Nogada comes directly from traditional Central Mexico recipes and is the dish Chef Ruiz beat Bobby Flay in 2018.
