Test Pilot is a contemporary carribbean and tiki-inspired craft cocktail bar located in downtown Santa Barbara’s thriving Funk Zone district. We are driven by local market fresh produce, re-imagined tiki classics (embracing a more dry and bitter profile) and fun atmosphere. Our cocktail program is driven by the template of exotic cocktails, but modernized for today’s more balanced palate. We reduce sugar content, add three dimensionality, and oftentimes rely on bitter elements for balance. We strive for approachability and accessability. With a robust rum selection of around 100 rums, check out one of our rum tasting flights. The bar's design has a nautical approach, being a few blocks from the ocean and aesthetic that feels Santa Barbara-n. We don't serve food.
