- When Awash opened its first restaurant in 1994, the idea was simple: show America what Ethiopia has to offer. Using traditional cooking techniques and motivated by the lack of Ethiopian representation in New York’s restaurant scene, we brought features from the realm of dining in Ethiopia to the busy streets of the Empire State. Over 25 years later, our devotion to introducing the rich history of Ethiopian cuisine remains at the core of our commitment to our fellow New Yorkers and visitors alike.
