Used this butcher earlier this yr. for a ferral pig I shot. This was the first time I turned the processing over to a butcher. I couldn't be more pleased with the finished product. Every item was vac wrapped, smoked meats were mild and delicious, likewise the bacon (not salty). Scapple was very nice too. My only comment is you REALLY need to know how you want the animal cut before you get there. I wasn't sure and the butcher was busy at the time and didn't really offer the kind of advice I think he should have - ergo only 4 instead of 5 stars. But the processing itself was 5 star. Go prepared and you will not be disappointed.
