Azteca Restaurant Enterprises is the company behind Azteca Mexican Restaurants, which was established in 1974. The restaurants serve a variety of Mexican foods, such as tacos, fajitas and vegetarian burritos and enchiladas. From a 24-seat restaurant in Burien, Wash., to a collection of more than 34 Azteca Mexican Restaurants, the company employs more than 1,400 people. It serves more than 400,000 customers each month. Stretching from Everett, Wash., in the north, to Ashland, Ore., in the south, to Kennewick and Spokane, Wash., in the east, and eventually even further to Azteca Real in Davie, Fla., Azteca Restaurant Enterprises has grown from operating a small mom and pop restaurant to a major corporation in the Pacific Northwest.
