The bakery s products include Italian table and hearth-baked French breads, sandwich rolls, hamburger and hot dog buns, muffins, bagels, biscotti, cannoli, cookies, and clairs. The bakery has a more than 100,000-square-foot plant that houses over five lines, and state-of-the-art European equipment. It develops new technology for difficult-to-automate rustic breads and rolls, and works with suppliers to modify formulas, and processes systems to meet production and sale needs. The company s knead dough facility supplies national accounts with frozen breads and rolls, with distribution in more than 40 states through brokers and food distributors. Its headquarters in Berwyn, Ill., operates like a large retail bakery, with more than four semiautomated lines, producing over 120 varieties of breads and rolls.
